Serve with spicy mayo or honey mustard dressing. Yummy.
2 chicken breasts
20 pretzels ( I used pareve honey wheat, found at Trader Joe’s), crushed
cayenne pepper, all spice, garlic powder, white pepper
2 eggs, beaten
Using a food processor, break up the pretzel rods into smaller pieces suitable for a breading. If you don’t have a food processor- don’t stress- you can place the pretzel rods in a large freezer-thick Ziploc and bang them with a mallet or the back of a spoon or your fists–this process is way more therapeutic I must say. I left the pieces a bit larger for added texture.
Season the crushed pretzels with a few dashes each of cayenne pepper, all spice, garlic powder and white pepper. Place in a shallow bowl and set aside. In another shallow bowl, place two beaten eggs.
Clean the chicken breasts and cut each breast into about 5-6 strips. Dip the breasts first in the egg, and then in the pretzel coating mixture. Place on a baking sheet, drizzle a tad of olive oil on top and bake in the oven for 15-20 minutes. Yields 10-12 pieces. Enjoy!
